In the latest instalment in Belmond’s ‘Taste Travel’ series, Chef Daniele Sera of Castello di Casole introduces us to the artisans keeping culinary traditions alive in the rolling hills of Tuscany.
A 10th century agricultural estate, the Castello is a proud defender of artisanal production, working with small scale producers who are committed to biodiversity and low-impact cultivation. Growing much of its own produce, the Castello has two vegetables gardens full of fresh vegetables and herbs, 30 beehives, 20 hectares of olive trees and expanses of vineyards.
